Munchie Monday: Spinach Tomato Risotto

Risotto is one of my favorite things to fix. It is perfect to accompany a meal or simply be the meal.

You’ll Need:

1 3/4 cups Tomatoes, diced
2 tablespoons Olive Oil
1 1/2 cups Arborio Rice
1 Onion, diced
4 cloves Garlic
5 cups Vegetable Stock
10 ounces Fresh Spinach
Red Pepper Flakes
Salt and Pepper

DSC_0286In a large pot saute onion, garlic, and tomatoes in oil. Add rice and cover with vegetable stock, 1/2 cup at a time. Keep adding stock once the rice has absorbed the previously added stock. Once rice is cooked, add the spinach. Allow to cook down, about 10 minutes. Add salt, pepper, and red pepper flakes to taste.
